Handmade soba Chobee

``Teuchi Soba Chobei'' was founded in 1980 (Showa 55) and is housed in a stately old folk house. A tatami room with a high ceiling, thick beams and pillars, and an alcove. You can enjoy handmade 100 percent soba noodles made with homemade flour in a restaurant that feels like you've been invited into an old home.
After training at Senju Takeyabu, the owner, Nobuyuki Kurumi, searched for his ideal soba, and developed a style of purchasing genuine soba noodles, sorting them, and peeling them. We grind the amount we will use that day in a stone mill and hand-make 100 percent soba without filling. The soup for mori soba uses bonito flakes, and the soup for kake soba uses mackerel and sour bonito. As for the sake side dishes, we have carefully selected ingredients such as rakkyozuke and tempura, all served with carefully selected pure rice sake. The store is open until 4 p.m. and sells out. Enjoy a luxurious and stylish time by starting with soba noodles in the early afternoon and ordering your soba noodles when the time is right.
