Bagel laulaa
A bagel specialty bakery that opened in November 2021.
The owner chef, Ms. Masami Tsuruta, makes bagels that have the original taste and texture of wheat flour, and tofu is kneaded into the dough for a healthy taste.
In order to create a gentle taste, she has researched the combination of carefully selected ingredients, and while it is oil-free and egg-free, she adds richness with molasses and adjust the taste with cane sugar.
As the owner chef makes and sells bagels by herself, the bakery is open four days a week from Thursday to Sunday. A maximum of 110 bagels are sold per day, and they are so popular that people line up before it opens. There are about 200 types of bagels, such as dessert-like, meal-like, and sandwiches, and 12 types are available daily, and the lineup will be announced on Instagram stories from 7 to 8 pm the night before.

NIKI BAKERY Ayase shop
This is a shop with a wide variety of breads that are delicious and satisfying, and that you will want to eat every day. Operated by Niki-no-Kashi in Ameyoko, Ueno, which sells domestic and foreign sweets, it opened as the first of three bakeries in Tokyo and has a history of 50 years.
When the shop opens at 7:00 in the morning, people come to buy bread all the time. You can eat the bread you bought at the cafe "LOIS JAPANE" attached to the bakery.
There are 130 types of bread that are created using about 10 types of homemade dough, including the Ayase shop's original chikuwa bread, Japanese and Western side dish bread, and Danish bread that pursues the taste of the ingredients.
Chikuwa bread has an outstanding visual impact.
A whole piece of fried chikuwa stuffed with a wiener is put on a bun, and the curry powder and sea lettuce added to the batter add flavor. Walnut raisins made with plenty of roasted walnuts are also popular.
A wide variety of breads are available, such as side dish bread such as chicken Tatsuta-age, and Danish pastry with a whole astringent chestnut.
Mr. Yasuhiro Okuno who is the manager of the shop. He is also involved in product development for all shops, and devises ideas while taking in the trends.

Ayase Bakery
The bakery will celebrate its 8th anniversary in March 2023. In the face-to-face sales showcase, side dish breads and Danishes using seasonal ingredients are lined up.
There are about 40 types of bread that use bread dough, croissant dough, and whole wheat dough separately. The dough is carefully made by the owner, Mr. Shotaro Tanaka, and baked in an oven with a kiln effect to provide a fluffy and delicious taste.
A chef friend of the owner devised a recipe for the thick omelet used in the popular thick omelet sandwich and strained the egg several times to make it smooth. The secret of its popularity is that you can feel the warmth of homemade products. They have also developed bite-sized canelés using rice flour so that people with wheat allergies can enjoy them.
Side dish bread like pork simmered gratin bread is more delicious when lightly warmed. Beautifully colored Danishes and canelés are perfect companions for teatime.
Whole wheat bread is also popular because it has a nice texture. Currants raisins with plenty of small raisins are thinly sliced and served with honey or cream cheese.
A good smell of freshly baked bread is produced one after another from three ovens. "The concept is to make bread that you won't get tired of eating every day," says Mr. Tanaka.

Le pain Lapin
The shop opened in 2011 and is celebrating its 12th anniversary this year. The owner, Mr. Yasuharu Miyamoto, is from Joël Robuchon, a well-known French restaurant and boulangerie. By offering authentic hard breads such as baguettes and campagne, which until then could only be purchased in the city center, the shop won the hearts of local bread lovers and gourmets as soon as it opened.
Based on the authentic French bread cultivated at a well-known store, there are 80 types of original breads that make full use of about 15 types of dough. Among them, there is a wide variety of Campagne, which uses natural yeast and has a rye flavor. You can enjoy it from breakfast to wine by combining fruits such as figs and oranges, nuts, and cream cheese.
Sandwiches sandwiched between baguettes that go well with seasonal ingredients are also excellent. There are raw chocolate coronet and melon bread that are popular with children, so it is a shop that can be enjoyed by the whole family.
You can enjoy authentic flavors at a reasonable price, such as Gugelhupf with a refreshing orange flavor and pain au chocolat, which is crispy croissant dough wrapped in chocolate.
